lemon infused chicken salad

In this heat it's almost a must to have a fresh and light diet, anything else is hard to get down hot, wind free days like these. What better way to twist up your regular chicken salad than adding some lemon into it. And fresh cucumber, oh how I love that green, water filled little fruit (yes botanically speaking, it is actually a fruit). So I panfried my sliced chicken in sesame oil, added some dried basil, salt, pepper, cayenne pepper and a few squirts of lemon. When cooled, I tossed the chicken around with some leftover rice I had from last night, fresh spinach, red onion and the lovely cucumbers. How easy. How fresh. A perfect summer lunch if you ask me.
